Smoky Duck Fat Chicken Lollipops w/ Chipotle Maple Dipping Sauce
These wings are not only tasty, but they also add a little sophistication to your plate

Ingredients:
2 lbs chicken wings
2 Tbs duck fat
dash of salt/pepper
1/2 cup of maple syrup
1 tbs of chipotles (add more for more spiciness)
lemon juice of 1/4 cut lemon or 1 tsp
1/4 cup chicken stock
Directions:
Preheat your oven to 450 degrees. Line a large baking sheet with tin foil and place a large baking rack on top of it.
Using a pair of scissors or a pairing knife, cut the skin and tendons around the base of each drumette. Scrape and push the meat down to the thick end, from top to bottom making into a ball of lollipop shape. Cut off any excess skin or meat by the knuckle end with scissors. Repeat with remaining chicken drumettes.
Pat your chicken wings dry with a paper towel, and then place all of your lollipops/wings into a large bowl and add in your duck fat, salt and pepper. Toss all the chicken together until it's distributed evenly. Lay your chicken on the baking rack - without them touching - and cook in the oven for 15 minutes. Remove from oven, flip over and cook another 10-15 minutes until crispy.
While your chicken is cooking, make your chipotle maple sauce: in a small pot, pour in your maple syrup, chipotle sauce, lemon juice, and chicken stock. On medium heat, let your mixture come to a boil and consistently stir for 5 minutes. Once the sauce has thickened, remove from heat and pour into a serving dish.
When your chicken is done cooking, place them on a serving dish and enjoy with your sauce.
